Zesty avocado salsa pairs perfectly with savory marinated beef slices.
Ingredients:
  • 2 medium limes
  • 1 tablespoon ground cumin
  • 1/4 teaspoon pepper
  • 2 cloves garlic, finely chopped
  • 1 lb beef flank steak, trimmed of fat
  • 1 cup chopped plum (Roma) tomatoes (about 2 medium)
  • 1/4 cup chopped red onion
  • 1 avocado, pitted, peeled and chopped
  • 1/8 teaspoon salt
  • 8 white corn tortillas (6 inch)
Instructions:
  • Juice the limes into a measuring cup, setting aside 1 tablespoon for the salsa. In a sturdy resealable plastic bag, combine the rest of the lime juice (approximately 1/4 cup), cumin, 1/4 teaspoon salt, pepper, and garlic. Add the beef to the bag, seal, and coat the beef by turning the bag. Marinate in the refrigerator for 1 hour, flipping occasionally.
  • In a medium bowl, combine tomatoes, onion, avocado, 1 tablespoon of lime juice, and 1/8 teaspoon of salt; toss well to coat.
  • Preheat broiler. Remove beef from marinade and discard marinade. Place beef on broiler pan rack. Broil 4 to 6 inches from heat for 10 to 15 minutes, turning once, until cooked to your liking. Allow to rest for 5 minutes, then slice thinly diagonally across the grain.
  • Follow package instructions to heat up tortillas. Evenly distribute the steak strips on each tortilla. Top with approximately 1/4 cup of avocado salsa on each tortilla and fold in half.
