Steamed dim sum with lime soy sauce

Ingredients:
  • 300g beef mince
  • 2 long fresh red chillies, deseeded, finely chopped
  • 63.00 gm soy sauce
  • 4.60 gm vegetable oil
  • 12 square rice paper wrappers
  • 20.00 gm caster sugar
  • 21.00 gm fresh lime juice
Instructions:
  • Mix the ground meat, chili peppers, minced garlic, and 1 tablespoon of soy sauce in a bowl. Refrigerate until needed.
  • Prepare a baking tray by lightly greasing it with 1/2 teaspoon of oil. Dip each rice paper wrapper individually in lukewarm water in a large shallow dish for 30 seconds until soft, being careful not to over soak them. Drain on paper towel. Fill the center of each wrapper with a tablespoon of the beef mixture, then fold the corners together to create a pouch shape. Repeat for the rest of the wrappers and beef mixture.
  • Brush the base of a 30cm bamboo steaming basket with the remaining oil. Position the steamer over a wok or large saucepan of simmering water (ensuring the base doesn't touch the water) and steam, covered, for 4-5 minutes until the dim sum are fully cooked.
  • In a small bowl, mix together the sugar, lime juice, and the rest of the soy sauce. Set aside.
  • Drizzle the lime soy sauce over the dim sum before serving.
