Try this quick and delicious 3-ingredient mussels dish for a seafood dinner ready in 25 minutes.
Ingredients:
  • 4 lb mussels in shells
  • 1/2 cup boiling water
  • Butter or margarine, melted, if desired
Instructions:
  • Inspect the mussels and discard any broken-shell or open ones. Scrub the mussels in cold water to clean them, removing any barnacles with a dull paring knife. Remove the beards by gently tugging on them, using a kitchen towel for assistance if needed. If they are stubborn, gently grip and pull with pliers.
  • Place mussels in a large container and cover them with cool water. Use your hands to gently agitate the water, then drain and discard it. Repeat this process several times until the water runs clear, then drain the mussels.
  • In a steamer, add half of the mussels and boiling water. Steam for 3 to 5 minutes, removing the open mussels. Discard any unopened mussels. Repeat with the rest of the mussels.
  • Serve piping hot mussels in their shells topped with a dollop of butter.
