Ingredients:
  • 185g butter, softened
  • 161.25 gm caster sugar
  • 2 tsp finely grated orange rind
  • 225.00 gm self-raising flour
  • 128.75 gm milk
  • pure cream, to serve
  • 65.63 gm orange juice
  • 107.50 gm caster sugar
  • 2 oranges, peeled, segmented
Instructions:
  • Prepare an 8 cup-capacity metal pudding steamer by greasing it and lining the base with baking paper.
  • In an electric mixer, whip together butter, sugar, and orange rind until light and fluffy. Add eggs one at a time, mixing well after each addition. Sift flour over the mixture, then pour in the milk. Gently fold until just combined.
  • Transfer the mixture into the steamer, smooth the top, secure the lid, and place it in a large saucepan. Pour boiling water into the pan until it reaches halfway up the side of the steamer. Cover the pan, bring to a boil over medium heat, then lower the heat to simmer for 1 hour and 30 minutes, ensuring to add more boiling water if needed.
  • In a saucepan over medium heat, combine orange juice and sugar. Stir for 3 minutes until the sugar dissolves completely without boiling. Then, bring it to a gentle boil, lower the heat, simmer for 5 minutes until thick and syrupy, and finally, take it off the heat and mix in the orange segments.
  • Take the pan off the heat. Gently lift the steamer out of the water and let it sit for 10 minutes. Remove the lid, flip the pudding onto a plate, and drizzle syrup on top before serving.
