Make festive Christmas pudding ahead; swap brandy for orange juice for a non-alcoholic twist.
Ingredients:
  • 500g mixed dried fruit
  • 250.00 ml pitted dried dates, chopped
  • 250.00 ml raisins, chopped
  • 125.00 ml red glace cherries, quartered
  • 180.00 gm firmly packed dark brown sugar
  • 125g butter, chopped
  • 2.50 gm bicarbonate of soda
  • 2 tsp finely grated orange rind
  • 250.00 ml plain flour, sifted
  • 150.00 gm self-raising flour, sifted
  • 5.00 gm mixed spice
  • 62.50 ml brandy
  • Vanilla custard, to serve
Instructions:
  • Prepare the metal pudding steamer by greasing it and lining the base with baking paper. In a saucepan over medium-high heat, combine mixed dried fruit, dates, raisins, cherries, sugar, butter, and 1 cup of cold water. Stir until the butter melts and bring to a boil. Cook and stir for 5 minutes, then remove from heat. Add bicarbonate of soda and stir well. Transfer the mixture to a large heatproof bowl and allow it to cool.
  • Combine the orange rind, egg, flours, spice, and brandy. Transfer the mixture into a prepared steamer, smoothing the top and securing the lid. Set the steamer in a large saucepan and carefully pour boiling water into the pan until it reaches halfway up the side of the steamer. Cover the pan and simmer over medium heat for 4 hours and 30 minutes, replenishing with boiling water as needed.
  • Take the pan off the heat and carefully lift the steamer from water. Let it stand for 10 minutes before removing the lid and turning the pudding onto a plate to serve with custard.
