Steamed syrup pudding with almonds and lemon

Delicious no-bake steamed pudding with almond, lemon, and golden syrup flavors.
Ingredients:
  • 175g butter, at room temperature
  • 175g brown sugar
  • 1 lemon, rind finely grated
  • 3 eggs, lightly whisked
  • 150g (1 cup) self-raising flour, sifted
  • 100g (1 cup) almond meal
  • 41.20 gm milk
  • 80ml (1/3 cup) golden syrup, plus extra, to serve
  • Pouring cream, to serve, optional
Instructions:
  • Thoroughly coat a 1.5L (6 cup) pudding basin with melted butter and line the base with baking paper. Use an electric mixer to beat butter, sugar, and lemon zest until pale and creamy. Gradually add the egg, ensuring to beat well after each addition. If it starts to curdle, mix in 1 tablespoon of flour between additions. Gently fold in the almond meal, milk, and remaining flour using a large metal spoon until just combined.
  • Drizzle golden syrup into the prepared basin. Gently pour the batter over the syrup and smooth the surface. Place a round piece of baking paper on top of the pudding, then cover with foil and secure tightly with string.
  • Position the basin in a large saucepan and fill with enough boiling water to reach halfway up the side of the basin. Bring to a boil, cover, and simmer on low heat for 2 hours or until a skewer inserted into the center comes out clean. Let it sit in the saucepan for 10 minutes after removing from heat. Unmold the pudding onto a serving plate by loosening the edges with a palette knife. Finish by drizzling with extra golden syrup and serving with pouring cream, if desired.
