Steamed stuffed pears with honey

Indulge in decadent stuffed pears with walnuts and dates.
Ingredients:
  • 4 beurre bosc pears, peeled, halved lengthways
  • 60ml (1/4 cup) fresh lemon juice
  • 200g fresh dates, pitted, finely chopped
  • 50g walnuts, finely chopped
  • 2 tsp finely grated lemon rind
  • 80ml (1/3 cup) honey
  • 5 whole cloves
  • Low fat ice-cream, to serve
Instructions:
  • Scoop out the pear seeds and core using a teaspoon to create a hollow. Arrange the pear halves in a shallow heatproof dish, then drizzle with lemon juice and coat evenly.
  • In a bowl, mix dates, walnuts, and lemon rind. Fill the pear halves with the date mixture. Drizzle honey over the pears and sprinkle cloves on top.
  • Gently steam the dish in a large metal steaming pan or bamboo steamer above simmering water. Dampen a 15cm-square non-stick baking paper, squeeze out excess moisture, and use it to cover the pears to maintain their moisture.
  • Steam the pears covered until just tender, about 5 minutes. Remove the dish from the steamer, discard cloves, then plate the pears and drizzle with any honey. Enjoy with low-fat ice cream, if desired.
