Elevate veggies with tangy citrus-pepper butter for a kid-friendly dish.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 small clove garlic, finely chopped
  • 1 teaspoon grated lime peel
  • 1 teaspoon finely chopped serrano or jalapeño chile
  • 1 tablespoon fresh lime juice
  • 3 cups cut-up fresh vegetables, such as broccoli florets, cauliflower florets and/or sliced carrots
Instructions:
  • Melt butter in a 1-quart saucepan over low heat. Stir in garlic for about 20 seconds. Mix in lime peel, chile, salt, and lime juice until well combined. Set the sauce aside.
  • In a 4-quart saucepan, set up the steamer basket and bring 1 cup of water to a boil.
  • Add the chopped vegetables to the steaming basket. Cover and cook for 4 to 5 minutes until they are tender-crisp.
  • Place the vegetables in a serving bowl and gently toss with the butter mixture to coat.
