Elevate your veggies with these simple and tasty flavored butter recipes.
Ingredients:
  • 1 pinch cumin seeds
  • 1 tablespoon fresh thyme leaves picked
  • 60 g unsalted butter softened
  • 450 g carrots cut into thick strips
  • ½ tablespoon chopped fresh rosemary
  • 3 anchovy fillets finely chopped
  • 350 g broccoli cut into florets
  • ½ lemon finely grated zest of, plus 1 tablespoon of juice
  • 350 g mangetout trimmed
  • 1 clove garlic chopped
  • ½ red chilli deseeded and finely chopped
  • 2 sun-dried tomatoes in oil drained and finely chopped
  • 500 g baby turnips quartered if large
  • 1 pinch sugar
  • ¼ orange finely grated zest of
Instructions:
  • Prepare the flavoured butters by combining the specified ingredients for each vegetable variation. Pound the ingredients together to create a paste, then mix in the butter and form into cylinders wrapped in greaseproof paper. Freeze to set. Once the butters are ready, arrange the vegetables in a 2-layer steamer - carrots closest to the heat, followed by baby turnips, broccoli florets, and mangetout. Steam for 10 minutes and serve with a slice of the flavored butter.
