Steel-Cut Oat Muffins

Hearty steel-cut oat and prune muffins, quick and delicious.
Ingredients:
  • cooking spray
  • 1 cup steel-cut oats
  • 1 cup milk
  • 1 cup wheat flour, sifted
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 large egg
  • 3 tablespoons vegetable oil
  • 2 tablespoons pureed prunes
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with foil liners, then spray the liners with cooking spray.
  • Combine oats and milk in a bowl and allow to sit for 10 minutes.
  • In a separate bowl, mix together flour, sugar, baking powder, and salt; set aside.
  • In a large mixing bowl, combine eggs, oil, and prunes. Add oat mixture and stir well. Gently fold in the flour mixture until just combined. Divide the batter evenly into the muffin cups, filling each 2/3 full.
  • Bake in the hot oven until a toothpick inserted in the center of a muffin comes out clean, about 20-25 minutes.
