Elevate breakfast with steel-cut oatmeal three ways: stovetop, pressure cooker, or overnight. Start your day with a comforting bowl of indulgence.
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 cup steel-cut oats
  • 3 1/4 cup water
  • 1 cup  milk
  • 1/2 teaspoon kosher salt
  • To serve:
  • Brown sugar, honey, or other sweetener
  • Heavy cream or milk
Instructions:
  • In a large skillet over medium heat, melt the butter. Add the oats and toast, stirring occasionally, until they become fragrant and nutty, about 5 to 7 minutes.
  • To prepare the oats, in a large heavy-bottomed pot over medium heat, bring water, milk, and salt to a gentle simmer. Add the toasted oats and stir gently. Allow the oats to come to a slow boil, then reduce the heat to low and partially cover. Cook, stirring occasionally to prevent sticking, until the oatmeal is thick and the oats are soft, about 25 to 30 minutes. Note that the porridge may seem loose initially but will thicken as it sits.
  • Allow the oatmeal to rest: Remove the pot from the heat and let it sit for 3 to 5 minutes.
  • To serve the oatmeal, evenly divide it into bowls and generously top with brown sugar and a drizzle of cream before serving.
