Sticky date and caramel pudding

Indulge in a cozy winter treat: sweet and sticky pudding!
Ingredients:
  • 150g pitted dates, coarsely chopped
  • 1.25 gm bicarbonate of soda
  • 1 tsp finely grated fresh ginger
  • 55g (1/4 cup, firmly packed) brown sugar
  • 60g butter, melted
  • 1 egg, lightly whisked
  • 10.00 gm cornflour
  • 375ml (1 1/2 cups) boiling water
  • 26.80 gm golden syrup
Instructions:
  • Preheat your oven to 180°C and generously brush a 1.5L (6-cup) ovenproof dish with melted butter to coat it lightly.
  • In a saucepan, bring dates and water to a boil on high heat. Remove from heat, add bicarbonate of soda and ginger, stir to combine. Let it cool for 15 minutes.
  • In a large bowl, sift the flour, then add the sugar and mix well. Create a well in the center. In a separate jug, combine the milk, butter, and egg. Slowly pour the egg mixture into the flour mixture and mix. Add the date mixture and stir until combined. Transfer the batter to the dish and use the back of a spoon to even out the surface.
  • Combine sugar and cornflour in a bowl. Sprinkle over the pudding mixture in the dish. Mix boiling water and golden syrup in a jug, then pour over the sugar mixture.
  • Bake in the oven for 35-40 minutes until a skewer inserted halfway into the center comes out clean. Let it cool for 5 minutes before serving, preferably with ice-cream.
