Sticky date golden syrup dumplings recipe

Indulge in a cozy winter dessert fusion of sticky date pudding and golden syrup dumplings for a timeless treat.
Ingredients:
  • 200g fresh Medjool dates, pitted, coarsely chopped
  • 200g (1 cup, firmly packed) brown sugar
  • 100g butter, chopped
  • 225g (1 1/2 cups) self-raising flour
  • 2.50 gm mixed spice
  • 125ml (1/2 cup) milk
  • 26.80 gm golden syrup
  • Double cream, to serve
Instructions:
  • In a small saucepan, combine dates and 185ml (3/4 cup) water over high heat. Boil until dates are softened. Transfer to a bowl and let sit for 10 minutes. Roughly mash with a fork.
  • In a large saucepan or stock pot, melt half of the butter with the brown sugar and 500ml (2 cups) water over low heat, stirring until smooth.
  • Rub the remaining butter into the flour using your fingertips until it forms fine breadcrumbs, then stir in the mixed spice.
  • In a jug, mix together milk and golden syrup. Pour the milk mixture and date mixture into the center of the flour mixture. Stir until thoroughly combined.
  • Bring the sauce to a boil and carefully scoop spoonfuls of batter into the sauce using a large ice cream scoop, ensuring the dumplings are in a single layer.
  • Lower the heat to a gentle simmer and cover the pot. Let it cook for 20 minutes or until a skewer comes out clean. Serve the dumplings and syrup in separate bowls, then top with a dollop of cream.
