Spiced ginger cake with rich, sticky sweetness. Deliciously dark and indulgent!
Ingredients:
  • 1/4 cup honey
  • 1/4 cup molasses
  • 1/4 cup packed dark brown sugar
  • 2 tablespoons butter
  • 2 teaspoons grated gingerroot
  • 1 cup Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 2 eggs, beaten
  • 1 tablespoon honey
  • 1 tablespoon molasses
  • 1 tablespoon water
  • 1 teaspoon powdered sugar
Instructions:
  • Preheat the oven to 400°F and gently coat an 8-inch square pan with cooking spray.
  • In a small saucepan, combine honey, molasses, brown sugar, butter, and gingerroot. Cook over medium heat, stirring constantly, until sugar is melted. Remove from heat and let cool for 5 minutes.
  • In a medium bowl, combine flour, baking soda, ground ginger, cinnamon, allspice, and salt. In a small bowl, whisk together buttermilk and eggs. Add the egg mixture to the honey mixture and stir well. Pour this over the flour mixture and mix until fully combined. Transfer the batter to the pan.
  • Bake the cake for 25 minutes until golden. Use a skewer to poke holes all over the cake. Combine 1 tablespoon honey, 1 tablespoon molasses, and water in a small bowl; brush mixture over the warm cake. Let cake cool completely in pan on a wire rack. Dust with powdered sugar before serving.
