Sticky maple cinnamon roasted carrots

Ingredients:
  • 2 bunches rainbow baby carrots, trimmed, scrubbed
  • 1 cinnamon stick
  • 54.00 gm maple syrup
  • 1 garlic clove, halved, thinly sliced
  • 1cm piece fresh ginger, cut into thin matchsticks
Instructions:
  • Preheat your oven to 200C/180C fan-forced, and prepare a small roasting pan by lining it with baking paper.
  • In the prepared pan, add carrots and cinnamon. In a small jug, mix maple syrup, garlic, ginger, and oil. Pour the mixture over the carrots and toss to coat. Season with salt and pepper to taste.
  • Roast the carrots for 40 to 50 minutes, turning them halfway through, until they are beautifully golden and tender. Garnish with fresh coriander before serving.
