Easy pecan muffins, a delicious twist on sticky buns, ideal for brunch or a weekday indulgence.
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 eggs, lightly beaten
  • 1 cup nonfat milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons applesauce
  • 0.5 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 0.25 cup margarine, melted
  • 0.25 cup packed brown sugar
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
  • In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. In a separate bowl, combine the eggs, milk, oil, applesauce, 1/2 cup brown sugar, and vanilla extract. Gently fold the egg mixture into the flour mixture until just combined.
  • Mix together the melted margarine or butter, 1/4 cup brown sugar, and pecans. Divide this mixture evenly into each muffin cup. Spoon about 1/4 cup of the muffin batter on top of the pecan mixture in each cup.
  • Bake the muffins in a preheated oven for 25 to 30 minutes until a toothpick inserted comes out clean. Invert the pan onto aluminum foil, let it stand for 2 minutes, then remove the pan.
