Satisfy your craving with vegetable-filled pork chow mein.
Ingredients:
  • 3 garlic cloves, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 62.50 ml shao hsing (Chinese rice wine)
  • 100.65 gm oyster sauce
  • 65.63 gm soy sauce
  • 1/4 tsp ground white pepper
  • 18.40 gm vegetable oil
  • 500g pork mince
  • 1 brown onion, cut into thin wedges
  • 1 red capsicum, sliced
  • 100g fresh baby corn, halved lengthways
  • 100g snow pea, trimmed
  • 350g fresh chow mein noodles
  • 250.00 ml shredded Chinese cabbage (wombok)
  • Thinly sliced green onion, to serve
Instructions:
  • In a jug, mix together garlic, ginger, shao hsing, oyster sauce, soy sauce, and pepper.
  • Prepare the noodles according to the instructions on the package, then drain them.
  • Heat the wok over medium-high heat with half of the oil, swirling to coat. Stir-fry the mince, breaking up lumps, for 8 minutes until browned. Add 2/3 of the sauce mixture and continue stir-frying until the mince is golden and sticky. Transfer to a bowl.
  • Pour in the rest of the oil and swirl it around to coat the ingredients evenly. Add the onion and stir-fry for 3 minutes. Then add capsicum, corn, and snow peas, and stir-fry for 4 minutes until the vegetables are tender. Add back the cooked mince, noodles, cabbage, the remaining sauce mixture, and 2 tablespoons of water. Stir-fry for 2 to 3 minutes until everything is heated through. Serve with a sprinkle of chopped green onion on top.
