Sticky pork skewers with orange and spinach couscous

Savor succulent pork skewers with zesty orange couscous.
Ingredients:
  • 131.25 gm orange juice
  • 45.00 gm brown sugar
  • 500g boneless pork rib steaks, cut into 2cm cubes
  • Olive oil cooking spray
  • 375.00 ml couscous
  • 375.00 gm boiling water
  • 2 oranges, peeled, segmented
  • 82.50 ml chopped fresh flat-leaf parsley leaves
  • 50g baby spinach
Instructions:
  • In a shallow glass or ceramic dish, mix together oil, juice, and sugar. Add pork and toss to coat. Cover and refrigerate for 30 minutes.
  • Skewer the pork and season generously with salt and pepper. Prep the grill pan with cooking spray, heat until medium-hot, and grill the skewers for 6 to 8 minutes, turning occasionally, until perfectly cooked.
  • Place couscous in a heatproof bowl and pour boiling water over it. Cover and let stand for 3 to 5 minutes until water is absorbed. Fluff the couscous with a fork, then mix in orange segments and parsley. Season with salt and pepper, then add spinach and mix well. Serve the pork skewers alongside the flavorful couscous mixture.
