Sticky ribs with 'dirty rice'

Classic Cajun dirty rice: flavorful dish with spicy mix of spices and meat.
Ingredients:
  • 125.00 ml tomato passata
  • 65.00 gm tomato sauce
  • 59.40 gm brown sugar
  • 1 garlic clove, crushed
  • 36.60 gm worcestershire sauce
  • 11.80 gm dijon mustard
  • 1.8kg American-style pork ribs
  • Coleslaw, to serve
  • 20g butter
  • 200.00 gm basmati rice
  • 1/2 tsp Mexican chilli powder
  • 1 tsp ground turmeric
  • 125.00 ml frozen corn kernels
  • 2 green onions, thinly sliced
  • 40.00 ml fresh coriander leaves, roughly chopped
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a large roasting pan with baking paper.
  • Mix passata, tomato sauce, sugar, garlic, Worcestershire sauce, and mustard in a bowl. Place ribs in a pan. Brush ribs with the marinade, cover with foil, and bake for 40 minutes. Uncover, turn ribs, baste with pan juices, and bake for another 40 minutes, basting halfway through.
  • For the 'Dirty rice': Start by melting butter in a large saucepan over medium heat. Add rice, chili powder, turmeric, and salt, stirring for 1 minute until the rice is nicely coated in spices. Mix in corn and 1.5 liters of cold water and bring it to a boil. Lower the heat and simmer covered for 20 minutes until the water is absorbed and the rice is tender. Take it off the heat and stir in the onion and coriander.
  • Cut the ribs into bite-sized pieces and serve them with flavorful 'Dirty Rice' and refreshing coleslaw.
