Sticky sesame chicken

Try our delicious baked sticky sesame chicken with a side of fluffy rice for a quick and tasty weeknight dinner.
Ingredients:
  • 6 small (about 1.2kg) chicken thigh cutlets, skin on
  • 42.00 gm light soy sauce
  • 40.00 ml Chinese rice wine
  • 44.00 gm sweet chilli sauce
  • 32.00 gm brown sugar
  • 20.00 ml finely shredded ginger
  • 2 bunches baby carrots, trimmed
  • 6.00 gm sesame seeds
  • Thinly sliced green shallot, to serve
  • Sesame oil, to drizzle
Instructions:
  • Preheat oven to 220C (200C fan forced). Heat a large ovenproof frying pan over high heat. Add chicken, skin side down, and cook for 7 minutes until crisp. Flip and cook for another 3 minutes to seal. Transfer chicken to a plate and drain fat from pan.
  • In a jug, blend the soy sauce, rice wine, sweet chilli sauce, sugar, and ginger together.
  • Toss carrots in the hot frying pan for 1 minute. Add chicken back to pan, pour over soy mixture, then bake for 30 minutes. Sprinkle with sesame seeds and bake for 5 more minutes until chicken is cooked. Finish with shallots and a drizzle of sesame oil before serving.
