Sesame chicken with broccolini rice

Try this irresistible sticky chicken on a broccolini rice bed for a quick and delicious weeknight dinner.
Ingredients:
  • 45.00 gm brown sugar
  • 3cm piece fresh ginger, grated
  • 20.00 ml sesame oil
  • 4 small chicken marylands, trimmed
  • 450g packet 2 1/2-minutes jasmine rice, unheated
  • 1 bunch broccolini, trimmed
  • 125.00 ml frozen peas
  • 2 green onions, shredded
  • 6.00 gm sesame seeds, toasted
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line a large rimmed baking tray with parchment paper.
  • In a jug, mix sugar, soy sauce, ginger, garlic, and half of the sesame oil. Put the chicken on the tray and pour the soy sauce mixture over it. Bake for 40 minutes, turning the chicken halfway through cooking.
  • Arrange chicken to one side of the tray, then spoon rice onto the empty side. Place broccolini on top of the rice, drizzle with remaining oil, and sprinkle with peas. Bake for an additional 10 minutes until the rice is heated through and the broccolini is tender. Serve garnished with green onion and sesame seeds.
