Satisfying sesame chicken wraps with broccoli, rice, and homemade peanut sauce - a delicious meal for any time of day.
Ingredients:
  • 1 tablespoon cooking oil
  • 0.75 pound skinless, boneless chicken breast, cut into strips
  • 2 tablespoons sesame seeds
  • 0.5 teaspoon garlic salt
  • 3 cups chopped broccoli
  • 1 medium red onion, thinly sliced
  • 1 teaspoon grated fresh ginger
  • 0.25 cup white sugar
  • 0.25 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons water
  • 2 teaspoons minced garlic
  • 1.5 cups warm cooked rice
  • 6 (10 inch) flour tortillas, warmed
Instructions:
  • In a large skillet over medium-high heat, sizzle chicken with sesame seeds, garlic salt, and pepper until cooked through, about 3-4 minutes. Stir in broccoli, onion, and ginger and cook until veggies are tender and chicken is fully cooked, about 5 minutes.
  • In a small saucepan over medium-low heat, blend together sugar, peanut butter, soy sauce, water, and garlic. Stir the sauce regularly until the sugar dissolves, approximately 3 minutes.
  • Fill the tortillas with the chicken-broccoli mixture, cooked rice, and drizzle with peanut sauce before rolling them up.
