Whip up delicious chicken wraps with a refreshing herb salad for meal prep.
Ingredients:
  • 2 Australian Chicken Breast Fillets
  • 10.00 gm ground cumin
  • 120g pea
  • 1 Lebanese cucumber, halved, seeded, finely chopped
  • 125.00 ml flat-leaf parsley leaves
  • 62.50 ml mint leaves
  • 1 red onion, thinly sliced
  • 42.00 gm lemon juice
  • 4 Helga’s Sourdough Wraps
  • 130g hommus
  • 1 avocado, stoned, peeled, sliced
  • 140g yoghurt
Instructions:
  • In a shallow bowl, coat the chicken with cumin and oil. Allow it to marinate for 10 minutes to enhance the flavors.
  • Preheat a chargrill over medium-high heat. Grill the chicken for 4 minutes on each side until golden brown and fully cooked. Place the chicken on a plate and tent it with foil. Allow it to rest for 5 minutes before serving.
  • While the peas are cooking in boiling water for 2 minutes, refresh them under cold water, drain, and place them in a bowl. Add cucumber, parsley, mint, onion, lemon juice, and the remaining oil. Mix everything together well.
  • Grill the wraps for 30 seconds on each side until lightly charred, then transfer to a plate and cover to keep warm.
  • Start by generously spreading the wraps with creamy hommus. Layer on the fresh tomato slices, creamy avocado, savory chicken, and pea mixture. Drizzle with a velvety yoghurt sauce, sprinkle with seasoning, and carefully roll everything up to create a deliciously filled wrap.
