Spicy chicken wraps: Quick crowd pleaser!
Ingredients:
  • 10.00 gm sweet paprika
  • 1/2 tsp cayenne pepper
  • 1.20 gm sea salt
  • 1/4 tsp dried chilli flakes
  • 2 garlic cloves, crushed
  • 80.00 ml finely chopped fresh coriander leaves
  • 84.00 gm lime juice
  • 56.88 gm olive oil
  • 800g chicken tenderloins
  • 8 large Lebanese bread rounds
  • 150g mixed salad leaves
  • 8 (1 bunch) radishes, trimmed, washed
  • 1.2kg cabbage
  • 2 medium carrots, peeled, grated
  • 6 green onions, thinly sliced
  • 247.50 gm mayonnaise
Instructions:
  • In a large ceramic baking dish, mix together paprika, cumin, pepper, salt, chili flakes, garlic, coriander, lime juice, and oil. Add chicken and stir well. Cover with plastic wrap and refrigerate for 30 minutes, if possible.
  • Prepare coleslaw: Thinly slice radishes into rounds and cut into thin strips. Combine radish, cabbage, carrot, onion, and coriander in a large bowl. In a separate container, mix mayonnaise and lime juice, then season with salt and pepper. Pour the mayonnaise mixture over the cabbage mixture and toss everything together.
  • Preheat a barbecue plate or chargrill over medium heat. Grill chicken for 4 to 5 minutes on each side until fully cooked. Place in a dish and cover to retain warmth.
  • Warm bread on each side for 1 to 2 minutes. Layer with coleslaw, chicken, and salad leaves. Roll up to enclose, then serve.
