Delicious and quick scrambled eggs with tomatoes, a family favorite. Serve with rice for a satisfying meal.
Ingredients:
  • 2 tablespoons vegetable oil
  • 6 eggs, beaten
  • 1 green onion, chopped
  • 2 large tomatoes, cut into thin wedges
  • salt to taste
Instructions:
  • In a large skillet over medium heat, heat the oil until shimmering. Add the eggs and green onion, cook and stir until the eggs are almost set. Add the tomatoes and continue cooking until the eggs are cooked through. Season with salt and serve.
