Stir-fried asparagus with sticky Chinese sauce

Savoury stir-fried asparagus in spicy soy sauce - a Chinese delight!
Ingredients:
  • 20.00 ml sesame oil
  • 1 bunch choy sum, trimmed, cut into 6cm lengths
  • 2 bunches asparagus, trimmed
  • 48.80 gm oyster sauce
  • 10.60 gm soy sauce
  • 8.00 gm brown sugar
  • 1cm piece fresh ginger, finely grated
  • 1 long red chilli, thinly sliced
  • 6.00 gm sesame seeds, toasted
Instructions:
  • Heat a wok over high heat and add half of the oil. Swirl to coat. Stir-fry choy sum until tender and wilted, about 2 minutes. Transfer to a plate. Stir-fry asparagus in the wok until just tender, about 2 to 3 minutes. Transfer to a separate plate and cover with foil to keep warm.
  • Pour the remaining oil, oyster sauce, soy sauce, sugar, garlic, and ginger into the wok. Add 2 tablespoons of water, then bring to a boil. Simmer for 1 minute until slightly thickened.
  • Place the choy sum neatly on a large serving plate. Layer it with asparagus, then generously drizzle with sauce. Finish by sprinkling with chili and sesame seeds. Serve and enjoy!
