Stir-fried rice with green vegetables (Khao phad pak)

Make a delicious Thai-inspired green veggie fried rice at home!
Ingredients:
  • 300g jasmine rice
  • 36.80 gm sunflower oil
  • 28.00 gm good-quality Thai green curry paste
  • 6 spring onions, thinly sliced on an angle
  • 100g snake beans (see note) or green beans, cut into 4cm lengths
  • 1 bunch thin asparagus, trimmed, cut into 4cm lengths
  • 1 zucchini, cut into matchsticks
  • 24.40 gm fish sauce
  • 250.00 ml Thai basil leaves (see note)
Instructions:
  • Simmer rice in seasoned boiling water for 10 minutes, or until perfectly cooked. Allow to cool.
  • Heat oil in a wok over medium-high heat. Sauté curry paste for 1 minute until fragrant. Add onion, garlic, beans, asparagus, and zucchini; stir-fry for 1-2 minutes until tender. Mix in rice, fish sauce, and basil; heat through.
