Stir-fried beef with vegetables

Ingredients:
  • 42.00 gm soy sauce
  • 2 garlic cloves, crushed
  • 1 tsp sambal oelek
  • 600g beef rump steak, trimmed, cut into thin strips
  • 36.40 gm peanut oil or vegetable oil
  • 1 brown onion, halved, cut into thin wedges
  • 1 bunch asparagus, trimmed, cut into thirds
  • 1 bunch broccolini, trimmed, cut into thirds
  • 150g snow peas, topped, halved diagonally
  • steamed jasmine rice, to serve
Instructions:
  • In a charming ceramic bowl, mix soy sauce, garlic, and spicy sambal oelek. Toss in the beef and gently stir until fully coated in the flavorful marinade.
  • Preheat a wok over high heat until smoking. Add 2 teaspoons of oil and swirl to cover the wok. Toss in the onion and stir-fry for 1 minute until softened. Add the asparagus, broccolini, and snow peas, and stir-fry for 3 minutes until nearly cooked. Transfer to a bowl and cover to retain heat.
  • Clean the wok and heat over high heat until hot. Add 2 teaspoons of oil and one third of the beef. Stir-fry for 2 minutes until browned. Transfer to a plate and repeat with remaining oil and beef in 2 more batches.
  • Add the beef and any juices back to the wok, add in the vegetables, stir-fry for 1 to 2 minutes until heated through. Serve over rice in bowls. Enjoy!
