Stir-fried lemon broccoli

Ingredients:
  • 27.60 gm vegetable oil
  • 82.50 ml slivered almonds
  • 500g broccoli, trimmed, cut into florets
  • 20.00 gm water
  • 1 lemon, rind thinly sliced, juiced
Instructions:
  • Heat a wok over medium heat until hot, then add 2 teaspoons of oil and nuts. Stir-fry for 2 minutes until golden, then set aside for later use.
  • Turn up the heat to high and add the last tablespoon of oil, swirling it around the wok to coat it. Toss in the broccoli and stir-fry for 1 minute. Then add water, cover, and cook for 30 to 40 seconds until the broccoli turns bright green.
  • Take the mixture off the heat. Stir in lemon zest, 1/4 cup of lemon juice, and nuts. Gently mix. Serve and enjoy!
