Stir-fried noodles with satay chicken & mushrooms

Delicious satay chicken and mushroom stir fry ready in just 30 minutes!
Ingredients:
  • 5 dried shiitake mushrooms
  • 250g wide long-life noodles
  • 36.80 gm vegetable oil
  • 500g chicken thigh stir-fry in satay sauce (see note)
  • 150g snow peas, julienned
  • 3 garlic cloves, finely sliced lengthways
  • 4cm fresh ginger, peeled and julienned
  • 40.00 ml kecap manis (sweet soy sauce)
  • Pinch of ground white pepper
Instructions:
  • In a heatproof bowl, soak the mushrooms in boiling water for 10 minutes until softened, drain, and slice. Repeat the process with the noodles by soaking in boiling water for 5 minutes, then drain and rinse with cold water until fully drained.
  • In a wok over high heat, sizzle 1 tablespoon of oil. Cook the chicken in 2 batches for 3-4 minutes until done. Place on a plate. Wash the wok and sizzle again with the remaining tablespoon of oil over high heat.
  • Cook the snow peas in a wok for one minute until tender, then set aside. Cook garlic and ginger until garlic is golden. Add noodles and mushrooms, stir-fry for 2-3 minutes. Season with kecap manis and white pepper. Serve noodles with satay chicken and snow peas on top.
