Ingredients:
  • 18.40 gm vegetable oil
  • 1 bunch enn choy (water spinach), washed, dried, leaves picked, stems cut into 6cm lengths
  • 2 garlic cloves, finely chopped
  • 24.40 gm fish sauce
  • 20.00 gm water
  • 5.00 gm caster sugar
  • 1 small fresh red chilli, deseeded, finely chopped
Instructions:
  • In a large wok over high heat, heat oil. Stir-fry en choy stems for 4 minutes. Add leaves, garlic, fish sauce, water, sugar, and chili. Toss for 2 minutes until leaves wilt and stems are tender crisp.
  • Move the dish to a stylish serving bowl, gently cover it with a pristine tea towel, and let it sit elegantly until you're ready to impress your guests.
