Sweet and gingery stir-fried ham with broccoli, cauliflower, and carrots over couscous, topped with water chestnuts and sliced almonds for extra crunch.
Ingredients:
  • 1.5 cups water
  • 1 cup couscous
  • 2 cups chicken broth
  • 0.25 cup cornstarch
  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 0.125 teaspoon ground ginger
  • 2 cloves garlic, minced
  • 1 (16 ounce) package mixed broccoli and cauliflower florets
  • 1 carrot, sliced
  • 0.25 pound cooked ham, cut into strips
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 0.5 cup sliced almonds
Instructions:
  • Bring water to a boil in a medium saucepan. Stir in couscous, simmer on medium-low heat for 8 to 10 minutes until fluffy. Cover and let rest.
  • Combine broth, cornstarch, soy sauce, brown sugar, and ginger in a small bowl, mix well, and set aside.
  • In a large skillet or wok, heat oil until shimmering. Stir in garlic, broccoli, cauliflower, and carrot, and stir-fry for 7 to 8 minutes until vegetables are crisp-tender, adding water as needed to prevent sticking.
  • Combine the flavorful broth mixture with the vegetables in the skillet, then add the savory ham and crunchy water chestnuts. Cook for 2 minutes, stirring regularly. Finish by mixing in the almonds. Serve the delicious stir fry over steaming hot couscous.
