Whip up a flavorful chicken stir-fry loaded with broccoli, bell pepper, and zucchini, served over fluffy rice to savor every drop of the tasty sauce.
Ingredients:
  • 6 ounces skinless, boneless chicken breast, cut into small pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 1 tablespoon cornstarch
  • 1 zucchini, cut into rounds and quartered
  • 1 large green bell pepper, cut into squares
  • 1 cup broccoli florets, cut into pieces
  • 0.5 cup chicken broth
  • 6 green onions, chopped
Instructions:
  • Combine chicken, soy sauce, sherry, and cornstarch in a large bowl and mix well.
  • In a large skillet or wok over medium-high heat, sizzle zucchini, bell pepper, broccoli, and garlic in 1 tablespoon of vegetable oil for 2 to 3 minutes. Pour in chicken broth, cover, and simmer until veggies are tender, about 4 to 5 minutes. Empty the delicious mixture into a large bowl and give the skillet a quick wipe.
  • In a hot skillet, sizzle the final tablespoon of vegetable oil. Sear and stir chicken until fully cooked, around 5 minutes. Toss in the vegetables and keep sautéing for an extra 2 to 3 minutes. Garnish with chopped green onions.
