Rustic tart filled with a medley of luscious stone fruits.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold butter, cut into 1/2-inch pieces
  • 1/2 cup cold buttermilk
  • 3 cups chopped peeled nectarines (3 to 4 medium)
  • 1 cup sliced plums (2 to 3 medium)
  • 1/3 cup granulated sugar
  • 1 teaspoon ground ginger
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon coarse sparkling sugar
Instructions:
  • Combine flour, 2 tablespoons granulated sugar, baking powder, and salt in a medium bowl. Use a pastry blender or fork to cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until dough forms. Knead 5 to 10 times until smooth, then shape into a round, flatten it, wrap in plastic, and refrigerate for about 45 minutes until firm.
  • Preheat your oven to 425°F. Combine nectarines, plums, 1/3 cup granulated sugar, cornstarch, and ginger in a medium bowl until the fruits are well coated; set the mixture aside.
  • Prepare the cookie sheet with parchment paper. Roll out the chilled dough into a 14-inch circle on a lightly floured surface using a floured rolling pin. Roll one side of the dough onto the rolling pin and transfer it carefully to the cookie sheet. Spread the fruit mixture over the dough, leaving a border. Fold up the edges of the dough over the filling, pleating the crust as needed.
  • In a small bowl, whisk together egg and milk until smooth. Brush the pastry edges with the egg wash, then sprinkle 1 tablespoon of sparkling sugar over the top. Bake for 35 to 40 minutes, or until the crust is golden brown and the juices are bubbling. Allow to cool on a rack for at least 2 hours before slicing into wedges to serve.
