Elevate the holiday season with luxurious Strawberry Champagne jam - perfect for gifting!
Ingredients:
  • 4.5 cups crushed strawberries
  • 0.5 cup dry champagne
  • 0.25 cup lemon juice
  • 1 (1.75 ounce) package powdered fruit pectin
  • 7 cups white sugar
Instructions:
  • Check three 1-pint jars for cracks and any rusty rings, discarding any damaged ones. Place them in simmering water for at least 5 minutes or until jam is done. Wash new lids and rings with warm soapy water.
  • Simultaneously, place strawberries, Champagne, lemon juice, and pectin in a nonreactive pan and bring to a boil. Add sugar and stir continuously until it boils again. Let it cook until sugar completely dissolves, for about 1 to 2 minutes.
  • Fill hot, sterilized jars with jam, leaving 1/4 inch of space at the top. Remove air bubbles by running a clean knife around the insides of the jars. Wipe the rims with a moist paper towel to clean off any residue. Securely top with lids and screw rings.
  • Fill a large stockpot halfway with water and bring to a boil. Using a jar holder, carefully lower jars 2 inches apart into the boiling water. Add more boiling water if needed to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 15 minutes.
  • After boiling, let the jars cool on a cloth for 12 to 24 hours. Check the lids by pressing the center. Store the jars without rings in a cool, dark place.
