Substitute Prosecco for Champagne and use fresh, seasonal peaches or strawberries instead of pomegranates for delicious results.
Ingredients:
  • 3-4 pomegranates
  • caster sugar optional
  • 1 bottle Champagne chilled
Instructions:
  • Begin by halving the pomegranates and extracting the seeds. An efficient method is to place a half of a pomegranate cut-side down in your hand and gently tap the top with a spatula, allowing the seeds to fall out into a bowl. Blitz the seeds in a food processor for 5 to 10 seconds, strain through a sieve to obtain fresh pomegranate juice. If the taste is too tart, consider stirring in some sugar to adjust the sweetness. Pour approximately 5cm of pomegranate juice into a Champagne flute and fill it to the top with Champagne.
