Indulgent boozy poke cake, sophisticated yet effortless for entertaining.
Ingredients:
  • cooking spray
  • 4 eggs, at room temperature
  • 0.75 cup white sugar
  • 0.25 cup strawberries and cream liqueur (such as Baileys®)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 (14 ounce) can sweetened condensed milk
  • 1.5 cups strawberries and cream liqueur (such as Baileys®)
  • 1 cup heavy whipping cream
  • 0.5 cup confectioners' sugar
  • 3 tablespoons strawberry-flavored gelatin mix (such as Jell-O®)
  • 1 cup sliced fresh strawberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat an 11x7-inch baking pan with cooking spray.
  • Use an electric mixer to whip eggs in a bowl until frothy. Gradually add sugar and beat until the mixture is thick and creamy for about 4 to 5 minutes. Stir in liqueur and vanilla extract. Fold in flour, baking powder, and salt until just combined; avoid overmixing. Transfer the batter to the baking pan.
  • Bake in the preheated oven for 22 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for about 1 hour before serving.
  • Mix together the sweetened condensed milk and liqueur until fully incorporated in a bowl. Use a skewer or toothpick to make holes all over the cooled cake. Carefully drizzle the sauce over the cake. Cover with aluminum foil and let it chill in the fridge until the sauce is soaked in, approximately 2 hours.
  • Whip cream in a chilled glass or metal bowl using an electric mixer until frothy. Gradually add confectioners' sugar and gelatin mix, continuing to beat until stiff peaks form.
  • Top the poke cake with luscious whipped cream and fresh sliced strawberries before serving.
