Indulge in creamy Italian gelato made with roasted strawberries and a drizzle of balsamic vinegar for a perfect balance of sweet and tangy flavors.
Ingredients:
  • 3.5 cups fresh strawberries, hulled
  • 0.5 cup white sugar, divided
  • 1 teaspoon balsamic vinegar
  • 0.5 cup heavy whipping cream
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and line your baking sheet with a large silicone non-stick mat to prevent any spills.
  • In a bowl, mix together strawberries, 1/4 cup sugar, and balsamic vinegar; gently toss to coat. Spread the mixture onto a baking sheet, using a spatula to scrape down the bowl and include all the liquid.
  • Bake in the preheated oven for 30 minutes, then allow to cool for another 30 minutes before serving.
  • Place the cooled strawberries and all their juices into a food processor. Then, add the remaining 1/4 cup of sugar and cream, and blend until smooth.
  • Transfer the strawberry mixture into an ice cream maker and follow the manufacturer's instructions to freeze it until it reaches a creamy gelato texture, about 40 to 45 minutes. Serve right away.
