Enhance strawberry pudding with a zesty kick from ginger beer for extra sweetness and tang.
Ingredients:
  • Melted butter, to grease
  • 190g (1 1/4 cups) self-raising flour, sifted
  • 155g (3/4 cup) caster sugar
  • 80g butter, melted, cooled
  • 160ml (2/3 cup) milk
  • 1 egg
  • 20.00 ml finely grated fresh ginger
  • 250g punnet strawberries, washed, hulled, quartered
  • 250ml (1 cup) ginger beer
  • 57.20 gm honey
Instructions:
  • Preheat the oven to 180°C, then coat a 2L (8-cup) baking dish with melted butter.
  • In a bowl, whisk together flour and 100g (1/2 cup) of sugar. Create a well in the center and smoothly whisk in the butter, milk, egg, and ginger. Gently fold in the strawberries until just combined. Spread the mixture over the prepared dish.
  • Combine the ginger beer and honey in a saucepan, warming over medium heat until the honey dissolves. Evenly sprinkle the remaining sugar on top of the pudding mixture. Slowly pour the warm ginger beer mixture over it. Bake for 50-60 minutes until a skewer inserted halfway into the center comes out clean.
