Indulge in a quick and delicious fruit cake bursting with flavor in just 15 minutes.
Ingredients:
  • 127.50 gm mascarpone
  • 4.40 gm vanilla extract
  • 30.90 gm milk
  • 450g packet Rectangular Unfilled Double Sponge Cake
  • 250g strawberries, thinly sliced
  • 2 kiwifruit, halved, thinly sliced
  • 49.50 gm icing sugar
Instructions:
  • Mix together the mascarpone cheese, vanilla extract, and 1 tablespoon of milk in a small bowl until well combined.
  • Place one decadent cake layer on a beautiful serving plate. Spread a luscious mascarpone mixture over the cake, followed by a generous portion of three-quarters of the vibrant strawberries and kiwifruit. Finally, crown the creation with the remaining cake layer.
  • In a small bowl, mix the icing sugar and remaining milk until smooth. Drizzle the icing over the cake and top with the remaining strawberry and kiwifruit slices.
