Ingredients:
  • nonstick cooking spray
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.75 cup white sugar
  • 0.5 cup unsalted butter, softened
  • 0.75 cup sour cream
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas, mashed
  • 2 cups strawberries, diced
  • 1 cup chopped nuts
Instructions:
  • Heat the oven to 350°F (175°C), then lightly coat a 9x5-inch loaf pan with nonstick spray and line a baking sheet with parchment paper.
  • Combine and sieve the flour, baking soda, cinnamon, and salt into a bowl.
  • In a large bowl, combine sugar and butter until creamy. Add sour cream, eggs, and vanilla, then mix well. Incorporate mashed bananas until combined. Slowly add dry ingredients and mix. Gently fold in strawberries and nuts. Transfer mixture into the prepared pan and place it on the lined baking sheet.
  • Bake in the preheated oven until beautifully golden and a toothpick inserted in the center emerges clean, for 65 to 80 minutes.
