Elevate classic banana bread with a hint of fresh strawberries for a delightful twist.
Ingredients:
  • 300g self-raising flour
  • 220g brown sugar
  • 4.00 gm baking powder
  • 2 overripe bananas, mashed
  • 2 Free Range Eggs, lightly whisked
  • 150g butter, melted
  • 125ml buttermilk
  • 130g strawberry
  • Strawberries, halved or quartered, extra, to decorate
  • 75g strawberries, finely chopped
  • 20.00 gm caster sugar
  • 125g butter, softened
  • 240g icing sugar mixture
Instructions:
  • Preheat your oven to 180C. Prepare your loaf pan by greasing and lining it with baking paper, leaving the long sides to hang over the edges.
  • Combine flour, sugar, and baking powder in a large bowl. In a separate medium bowl, whisk together banana, egg, butter, and buttermilk. Fold in the egg mixture and chopped strawberry into the flour mixture. Transfer to the prepared pan and bake for 1 hour until a skewer comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • For the strawberry buttercream, simmer strawberries and sugar in a saucepan until sugar dissolves and strawberries break down, around 5 minutes. Thicken the mixture for another 2 minutes, then let it cool.
  • In a bowl, use an electric mixer to beat the butter until very pale. Gradually add the icing sugar, beating well after each addition. Mix in the strawberry mixture.
  • Frost the banana bread with the strawberry buttercream and garnish with halved or quartered strawberries.
