Indulgent cream cheese stuffed blintzes topped with fresh strawberries for a delicious breakfast treat.
Ingredients:
  • 3 eggs
  • 0.66666668653488 cup all-purpose flour
  • 0.5 teaspoon salt
  • 1.5 cups milk
  • 1.5 tablespoons butter, melted
  • 1 (8 ounce) container cottage cheese
  • 1 (3 ounce) package cream cheese, softened
  • 0.25 cup white sugar
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons butter, or as needed
  • 1 (10 ounce) package frozen sweetened strawberries, thawed, or to taste
Instructions:
  • In a large bowl, whisk together eggs, flour, and salt until a smooth mixture forms. Gradually stir in milk and 1 1/2 tablespoon of butter. Cover the bowl with plastic wrap and allow the batter to rest in the refrigerator for a minimum of 2 hours.
  • Blend cottage cheese, cream cheese, sugar, and vanilla extract in a blender until mixture is smooth and creamy.
  • In a large skillet or crepe pan over medium heat, melt a touch of butter. Add a small portion of batter and swirl the skillet to create a thin layer. Cook for about 30 seconds until set. Flip and cook the other side for around 10 seconds. Place on a plate to cool. Repeat the process with the remaining butter and batter.
  • Place a generous amount of filling onto each blintz, gently fold, and garnish with fresh strawberries.
