Strawberry Buttermilk Cake

Delicious strawberry buttermilk cake baked in cast iron skillet or springform pan.
Ingredients:
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, at room temperature
  • 1 cup sugar
  • 1.5 teaspoons vanilla extract
  • 3 large eggs, at room temperature
  • 0.5 cup buttermilk, at room temperature
  • 1 (16 ounce) package strawberries, diced
  • 2 tablespoons sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 10-inch cast iron skillet.
  • In a bowl, mix together the flour, baking powder, and salt. Set aside.
  • Using an electric mixer, cream butter and 1 cup of sugar until light and fluffy in a separate bowl. Mix in eggs one at a time, followed by vanilla. Alternate adding dry ingredients and buttermilk. Gently fold in strawberries. Pour batter into skillet, smoothing out the top, and sprinkle with 2 tablespoons of sugar.
  • Bake in the oven until golden and a toothpick inserted in the center comes out clean, about 60-75 minutes.
