Strawberry Buttermilk Crumb Cake

Easy and delicious strawberry buttermilk cake, perfect for using fresh seasonal strawberries!
Ingredients:
  • 3 cups all-purpose flour
  • 1.75 cups white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon ground nutmeg
  • 0.75 cup unsalted butter, cut into 1/2-inch cubes
  • 1 cup buttermilk
  • 2 large eggs, at room temperature
  • 2 cups hulled and halved strawberries
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C), then line a 9-inch square cake pan with parchment paper, allowing some overhang on all sides.
  • In a large bowl, combine flour, sugar, baking powder, salt, and nutmeg. Add butter and mix until the mixture resembles wet sand. Set aside 1 cup of the crumb mixture for the topping.
  • Combine buttermilk, eggs, and vanilla with the dry ingredients, mixing until no dry clumps of flour are left. Gently fold in the strawberries.
  • Spread the batter into the pan evenly, then sprinkle 1 cup of the reserved crumb mixture on top.
  • Bake the cake in the preheated oven for 60 to 65 minutes until a toothpick inserted into the center comes out with a few moist crumbs. Let the cake cool in the pan, then lift it out using the parchment overhang. Finally, cut and serve.
