Indulge in a delicious and easy breakfast inspired by panna cotta flavors - fresh strawberry buttermilk overnight oats ready in minutes when prepped the night before.
Ingredients:
  • 1/2 cup old fashioned oats
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla or almond extract
  • 1/2 cup plain yogurt
  • 1/2 cup sliced strawberries
  • 2 to 3 teaspoons honey
  • 1 tablespoon toasted slivered almonds (optional)
Instructions:
  • Begin by soaking the oats in a mixture of buttermilk and extract in a small bowl. In another small bowl, mix honey with sliced strawberries and stir to combine.
  • For best results, chill overnight: Cover the bowls and refrigerate to allow ingredients to soften. Oatmeal cups can be prepared ahead and refrigerated for up to 5 days.
  • Mix together yogurt and berries. In the morning, oats should be thick and creamy. Spoon yogurt over oats, then spoon strawberries and their juice on top. Sprinkle with almonds. Enjoy! For an alternative method, combine all ingredients except almonds in a pint-size jar, stir well, then refrigerate overnight or up to 5 days. Top with almonds before eating.
