Indulge in delicious cheesecake bars with a simple sugar cookie base.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/3 cup butter or margarine, melted
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 egg
  • 2 packages (8 oz each) cream cheese, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 3/4 cup strawberry spreadable fruit
Instructions:
  • Preheat the oven to 350°F and generously coat the bottom of a 13x9-inch pan with cooking spray.
  • Combine the cookie mix, butter, flour, and 1 egg in a medium bowl and mix until a soft dough forms. Press the dough evenly into a pan. Bake for 15 to 18 minutes or until lightly golden brown. Allow to cool for 15 minutes before serving.
  • In a large bowl, use an electric mixer to blend cream cheese, sugar, vanilla, and 2 eggs until smooth. Spread the mixture evenly over the crust in the pan.
  • Transfer spreadable fruit into a small resealable plastic bag and cut off a small corner. Squeeze the fruit in 3 lines down the length of the pan. Use a knife to drag the fruit through the cream cheese mixture at 1-inch intervals. Bake for another 25 to 30 minutes until the filling is set. Chill in the refrigerator for around 2 hours until firm. Cut into 8 rows by 4 rows to make bars and store them covered in the fridge.
