Strawberry Cheesecake Jell-O Shots

Vodka-spiked cheesecake and strawberry gelatin layered on a graham cracker crust for irresistible strawberry Jell-O shots.
Ingredients:
  • 6 graham crackers
  • 2 tablespoons melted butter
  • 1 teaspoon white sugar
  • 1 (.25 ounce) package unflavored gelatin
  • 0.25 boiling water
  • 1 (12 ounce) container whipped cream cheese
  • 0.33333334326744 cup confectioners' sugar, or more to taste
  • 0.5 teaspoon vanilla extract
  • 1.5 cups vodka, divided
  • 0.5 (3 ounce) package strawberry flavored gelatin (such as Jell-O®)
  • 0.25 cup boiling water
  • 3 ice cubes
Instructions:
  • Pulse graham crackers in a blender or food processor. Combine with melted butter and sugar until mixed. Press into 12 tall shot glasses.
  • Combine unflavored gelatin with 1/4 cup of boiling water in a bowl and stir until thoroughly combined.
  • Blend cream cheese, confectioners' sugar, vanilla extract, and gelatin in a blender until smooth. Mix in 1 cup vodka. Taste and add more sugar if needed. Pour over graham cracker layer, leaving 1 inch space on top. Refrigerate for at least 1 hour.
  • Combine strawberry gelatin and 1/4 cup boiling water in a bowl, stirring well. Mix in the remaining 1/2 cup vodka and ice cubes until melted and mixture thickens. Pour over cream cheese layer and chill shots for at least 30 minutes.
