Elevate a simple dessert with store-bought shortbread as the foundation!
Ingredients:
  • 1 punnet strawberries, hulled, sliced
  • 35g icing sugar
  • 100g creme fraiche
  • 100g cream cheese, softened
  • 20.00 ml Grand Marnier or kirsch (optional)
  • 8 good-quality shortbread rounds (see Note)
  • Thick cream, to serve
Instructions:
  • Blend half of the strawberries with 1 tablespoon of sugar until smooth. Set aside. In a mixing bowl, combine creme fraiche, cheese, remaining sugar, and liqueur if desired. Spread this mixture onto the biscuits, then assemble 4 biscuits on plates, cheese-side up. Top with sliced strawberries and the strawberry sauce, then add 4 more biscuits, cheese-side down. Dust with icing sugar and serve with cream.
