Indulgent strawberry and dark chocolate chip ice cream made with luxurious custard base of cream and egg yolks.
Ingredients:
  • 1 quart strawberries, hulled and sliced
  • 1 cup white sugar, divided
  • 1 tablespoon lemon juice
  • 2 cups heavy whipping cream, divided
  • 1 cup whole milk
  • 6 egg yolks
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 8 ounces dark chocolate chips
  • ice cubes
Instructions:
  • In a food processor, pulse together fresh strawberries, a quarter cup of sugar, and a splash of lemon juice until the strawberries are roughly chopped. Transfer the mixture to a bowl and chill in the refrigerator for about an hour.
  • In a saucepan over gentle heat, warm 1 cup heavy cream, milk, and 3/4 cup sugar until sugar dissolves, about 5 minutes. Remove from heat, cover, and let the creamy mixture cool for 30 minutes before using.
  • In a bowl, vigorously whisk the egg yolks until smooth. Gradually pour the warm cream mixture into the egg yolks while whisking non-stop. Return this tempered egg mixture back to the saucepan.
  • Cook egg yolk mixture over medium heat, stirring and scraping the bottom of the pan until the custard thickens and coats the back of a spatula, approximately 5 minutes.
  • Pour the remaining cup of heavy cream into a large bowl and place a strainer on top. Gently strain the custard into the bowl, stir in vanilla extract and salt. Mix in the chilled strawberry mixture and chocolate chips.
  • In a large bowl, combine ice cubes and water, then stir. Set the bowl of strawberry-chocolate mixture in the ice bath to cool to room temperature, stirring occasionally for about 10 minutes. Remove the bowl from the ice bath, cover with plastic wrap, and refrigerate until well chilled, for 8 hours to overnight.
  • Transfer the chilled mixture into an ice cream maker and freeze as per the manufacturer's instructions until it reaches a "soft-serve" consistency. Then, place the ice cream into a lidded container, cover the surface with plastic wrap, and seal it. For optimum flavor, let the ice cream ripen in the freezer for at least 2 hours or overnight.
